The CHEF’STABLE experience starts with being welcomed into Chef Santi’s personal studio where you are greeted with an arrival drink. A 7-course fine dining experience follows, paired with wines specially sourced by Chef or, for those not partaking in wine, homemade non-alcoholic teas and fermentations (with a minimum of 5 days prior notice to prepare).
The concept of CHEF’STABLE By Santi Louzan is to create an unforgettable personal experience and a close encounter with Chef Santi as he shares his food and stories and takes you through his culinary journey.
How our experience works:
CHEF’STABLE CAPETOWN is not a restaurant; the aim is for you to experience something very different. Whether you join the weekly social tables or a private booking, the same format applies: everyone arrives at 7pm and everyone eats at the same time. There are no menus, Chef will create a this based on what is available and seasonal. You won’t get a preview until it’s right in front of you and you hear the story around the dish. Chef simply asks you to put your taste buds in his hands.
Chef Santi’s award-winning CHEF’STABLE ethos is that you can eat whatever you choose any day of the year at any given restaurant. Chef Santi offers you something special; an opportunity to have an exclusive and exciting food experience being fed a Chef’s choice, as if you are visiting a friend who happens to have 20 plus years Michelin Star experience.
We accommodate some food allergies and diets (such as vegetarian) with a minimum of 5 days’ notice.
As a small, exclusive dining experience, we take payment as confirmation of the booking. We hope to see you soon!
Santi was born in Cee, a small village in Galicia, in the North West of Spain. He grew up with access to the best produce and learnt from generations of artisans (one side of his family are farmers, the other, fishermen). His passion for food and cooking was ignited from a very young age by his mum and granny who taught him a lesson he never forgot: “love the ingredients.” In his teens, Santi’s family moved to England. His first job in a kitchen was washing plates at a local restaurant and from there he worked his way up the ladder, ending up in Michelin Star establishments working front and back of house, in a career spanning more than 20 years.
After many years opening and running restaurants and hotels, he wanted to do something different, more personal, and started CHEF’STABLE CAPETOWN as an intimate fine dining social food experience.
Chef Santi believes in creating dishes that are based around real, locally -sourced ingredients and presenting food that offers depth of flavour without over complicating or overworking them.
Santi’s origins and family link him to his food roots and his creative, artistic mind as well as his personal and professional footprint give him diversity within his cuisine. He explores gastronomy as far as he can with a responsible attitude, combining classic with modern techniques.
How Chef Santi’s first sees a dish and how he then moves to create it:
“I first see it in my mind because of a particular produce or pick up a hint from something/someone, I visualise the flavour then how I think I want it to look and then I go about putting it together and working with the flavours the look till I find my delish…”
Chefs Santi’s space also displays his other passion: art. Most are his personal pieces and some are for sale – don’t forget to ask about them; they all have a story behind them.

We are a small bespoke business and our office is not operational on weekends. We will endeavour to get back to you as soon as possible.
Chef Santi is also available for private hire and events, by taking his CHEF’STABLE CONCEPT to you. From casual family gatherings to formal and corporate events.
We are a small service and regrettably, we cannot guarantee trace elements of allergens will not be present.
Getting to us:
The address will be provided with your booking confirmation. We recommend using Uber or similar so that you can wine and dine without worrying.
Gratuity:
Should you wish to show your appreciation, please give it to your host as it will be divided between the entire team.
Payment:
Due to the nature of our exclusivity, payment must be made to confirm your booking. Should you wish to make payment through a different means than the one provided please contact us on bookings@chefstablecapetown.com. We will get back to you as soon as possible.
Children:
Due to the nature of our experience we unfortunately do not accommodate guests under the age of 16 and those over 16 must be comfortable with adult conversation.
Children may be younger at private booking.
Cancellations:
You will receive a full refund should you cancel your reservation up to 30 days prior to the start of your booking.
Date changes may be allowed with 72 hours prior agreement.
If the party is smaller on arrival you will still be charged for the full booking, as we have prepared for the anticipated number of guests. Should you wish to increase the number of your party please contact us first; please do not arrive without prior confirmation.
